4 medium sweet potatoes

1 lb ground turkey

2 cups broccoli florets, finely chopped

1 cup sharp cheddar cheese, shredded

1/2 cup Greek yogurt (or substitute with sour cream)

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Chopped green onions, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.

    Roast the Sweet Potatoes: Rinse the sweet potatoes thoroughly and use a fork to pierce them several times. Place them on a baking sheet and drizzle with a little olive oil, making sure to coat them evenly. Roast in the preheated oven for 45-60 minutes, or until they are tender enough to easily pierce with a fork and the skin is caramelized.

      Cook the Turkey: While the sweet potatoes are roasting, heat the remaining olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until it becomes fragrant. Then, introduce the ground turkey along with onion powder, smoked paprika, Italian seasoning, salt, and pepper. Cook the mixture for about 5-7 minutes, stirring frequently until the turkey is fully cooked and no longer pink.

        Add the Broccoli: Once the turkey is cooked through, stir in the finely chopped broccoli florets. Cook for an additional 5 minutes, allowing the broccoli to soften slightly but still retain its vibrant color.

          Combine the Filling: Remove the skillet from heat, then mix in the Greek yogurt and half of the shredded cheddar cheese until everything is well incorporated and creamy.

            Stuff the Sweet Potatoes: When the sweet potatoes are fully cooked, carefully slice each one open lengthwise. Use a fork to fluff the insides gently, creating space for the filling. Spoon the turkey and broccoli mixture generously into each sweet potato.

              Top with Cheese: Sprinkle the remaining shredded cheddar cheese evenly over the stuffed sweet potatoes, ensuring a rich cheesy topping.
