4 large bell peppers (any color)

1 lb ground turkey

2 cups fresh spinach, chopped

1 cup cooked quinoa (or rice)

1 medium onion, diced

3 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup shredded mozzarella cheese (divided)

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat Your Oven: Start by preheating your oven to 375°F (190°C), ensuring it's ready for the stuffed peppers.

    Prepare the Bell Peppers: Carefully slice the tops off the bell peppers and remove the seeds and membranes inside. Lightly brush the outer surface of each pepper with olive oil, then stand them upright in a baking dish.

      Cook the Turkey Mixture: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onions and sauté until they turn translucent, approximately 3-5 minutes. Then, add the minced garlic and cook for an additional minute until you can smell its aroma.

        Incorporate the Turkey and Spinach: Raise the heat to medium-high and add the ground turkey to the skillet. Cook the turkey until it's browned and no longer pink, around 6-8 minutes. Once browned, fold in the chopped spinach, cooking until it wilts and combines well.

          Mix in Other Ingredients: Stir in the cooked quinoa (or rice), diced tomatoes, oregano, smoked paprika, salt, and pepper into the turkey mixture. Mix everything thoroughly and let it cook for an extra 2-3 minutes to enhance and meld the flavors.

            Stuff the Prepared Peppers: Remove the skillet from the heat. Mix half of the shredded mozzarella cheese into the turkey and spinach mixture. Use a spoon to carefully fill each prepared bell pepper with the mixture, packing it gently to ensure it's well-stuffed.

              Top with Mozzarella: Once all the peppers are stuffed, sprinkle the remaining mozzarella cheese on top of each pepper for a delightful cheesy crust.

                Bake the Stuffed Peppers: Cover the baking dish loosely with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Serve and Garnish: Once baked, take the stuffed peppers out of the oven and let them cool for a few minutes. If desired, garnish with fresh parsley for a touch of color and flavor before serving warm.
