1 pound ground turkey

2 medium sweet potatoes, peeled and cut into small, even cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder (optional, for a touch of heat)

Salt and freshly ground pepper, to taste

2 tablespoons olive oil, divided

2 tablespoons fresh parsley, chopped (for garnish)

4 large eggs (optional, for topping)

Cook Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes, season generously with salt and pepper, and sauté for about 10-12 minutes. Stir occasionally, allowing them to soften and develop a delightful golden-brown crust.

    Add Vegetables: Once the sweet potatoes are nearly tender, add the chopped onion, minced garlic, and diced red and green bell peppers to the skillet. Continue cooking for another 5-7 minutes, stirring frequently, until all the vegetables are tender and aromatic.

      Cook Turkey: Create a space in the skillet by pushing the vegetable mixture to one side. Add the remaining tablespoon of olive oil to the vacant area and then introduce the ground turkey. Use a spatula to break up the meat and stir as it cooks. Cook until the turkey is browned and no longer pink, approximately 5-7 minutes.

        Season: Once the turkey is fully cooked, mix it in with the vegetables. Stir in the smoked paprika, ground cumin, and chili powder (if using).
