Ingredients

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons extra virgin olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and freshly ground black pepper, to taste

1 tablespoon freshly squeezed lime juice

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1/4 cup red onion, finely chopped

1 small jalapeño, seeded and minced (optional for a spicy kick)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and freshly ground black pepper, to taste

Instructions

Marinate the Shrimp: In a large mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, ground cumin, lime juice, along with a generous pinch of salt and pepper to create the marinade. Add the peeled and deveined shrimp, tossing them gently to ensure they are evenly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for 20-30 minutes, allowing the flavors to meld beautifully.

Prepare the Salsa: While the shrimp is marinating, take this time to prepare the vibrant strawberry salsa. In a medium-sized bowl, mix together the diced strawberries, finely chopped red onion, minced jalapeño (if desired), chopped cilantro, lime juice, and a sprinkle of salt and pepper. Stir everything well and allow it to rest for 10-15 minutes – this will enhance the flavor combination as the juices mingle.

Skewer the Shrimp: Preheat your grill or grill pan over medium-high heat, getting it nice and hot. Once ready, thread the marinated shrimp onto the skewers, aiming for about 5-6 shrimp per skewer but ensuring they are not crowded. This will allow the shrimp to cook evenly.

Grill the Skewers: Lightly brush the grill grates with oil to prevent sticking. Carefully place the shrimp skewers on the grill and cook for about 2-3 minutes per side. Keep an eye on them, as you want the shrimp to turn opaque and develop a lovely char without becoming rubbery.

Serve: After grilling, remove the shrimp skewers from the heat and let them rest for about a minute. Arrange the skewers on a serving platter and generously top with the fresh strawberry salsa. For an extra touch, sprinkle some additional cilantro over the dish for color and flavor.

Enjoy: These zesty shrimp skewers are perfect for serving alongside your favorite side dishes, such as rice or a fresh salad. Alternatively, enjoy them solo for a light and refreshing meal bursting with flavor!
