Ingredients

2 lbs ground beef

1 medium onion, chopped

4 cloves garlic, minced

1 bell pepper (any color), chopped

2 (14.5 oz) cans diced tomatoes (with juice)

1 (15 oz) can tomato sauce

2 (15 oz) cans kidney beans, drained and rinsed

1 (15 oz) can black beans, drained and rinsed

2 tbsp chili powder

1 tbsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano

½ tsp cayenne pepper (optional for extra heat)

Salt and pepper to taste

1 cup beef broth

1 tbsp olive oil

Toppings: shredded cheese, sour cream, diced green onions, and fresh cilantro

Instructions

Brown the Beef: Heat a skillet over medium heat and add the olive oil. Once the oil is hot, add the ground beef. Cook it, stirring occasionally, until it is browned all over (about 6-8 minutes). Drain off any excess fat and transfer the browned beef to the slow cooker.

Sauté the Vegetables: In the same skillet, add the chopped onion and bell pepper. Sauté for approximately 5 minutes, or until the vegetables have softened. Then, add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring until fragrant. Transfer this flavorful vegetable mixture to the slow cooker.

Combine Ingredients: In the slow cooker, add the diced tomatoes (with their juice), tomato sauce, kidney beans, black beans, chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), and season with salt and pepper. Pour in the beef broth. Stir everything together thoroughly until evenly combined.

Slow Cook: Secure the lid on the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. If possible, stir the chili halfway through the cooking time to help meld the flavors.

Taste and Adjust: After cooking, taste the chili and adjust the spices or seasoning as desired. For a thicker consistency, leave the lid off and let the chili cook on high for an additional 30 minutes.

Serve: Ladle the hearty chili into serving bowls and top generously with your favorite garnishes, such as shredded cheese, a dollop of sour cream, diced green onions, and fresh cilantro for a burst of flavor.

              Prep Time: 20 minutes | Total Time: 7-8.5 hours | Servings: 6-8

                - Presentation Tips: Consider serving the chili in colorful bowls to enhance the visual appeal. A sprinkle of chopped cilantro on top can add a fresh touch, while toppings can be served on the side for guests to customize their bowls.
