Ingredients

1 pound large shrimp, peeled and deveined

2 cups mixed vegetables (such as bell peppers, snap peas, carrots, and broccoli)

3 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce (optional for extra depth)

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

2 tablespoons vegetable oil

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

1 tablespoon sesame seeds (for garnish)

3 green onions, chopped (for garnish)

Cooked rice or noodles (for serving)

Instructions

Prep the Shrimp: In a medium bowl, combine the shrimp with 1 tablespoon of soy sauce, minced ginger, and minced garlic. Allow the shrimp to marinate for about 10 minutes to absorb the flavors.

Heat the Oils: In a large skillet or wok, heat the vegetable oil and sesame oil over medium-high heat. Wait until the oils are shimmering and hot, which will help achieve a nice stir-fry.

Sauté the Shrimp: Add the marinated shrimp to the skillet and stir-fry for approximately 2-3 minutes. Cook until the shrimp are pink and opaque throughout. Once cooked, remove the shrimp from the skillet and set aside on a plate.

Cook the Vegetables: Using the same skillet (with the remaining oils and flavors), add the mixed vegetables. Stir-fry for about 4-5 minutes, allowing the vegetables to become tender-crisp, retaining their vibrant color and nutrients.

Combine and Flavor: Return the sautéed shrimp to the skillet with the vegetables. Pour in the remaining 2 tablespoons of soy sauce and the optional oyster sauce, mixing well to combine. If using the cornstarch slurry, pour this in now to help thicken the dish. Stir everything together and continue cooking for an additional 1-2 minutes until warmed through.

Serve: Remove the skillet from heat. Garnish the dish with toasted sesame seeds and chopped green onions. Serve immediately over a bed of warm cooked rice or noodles, allowing the vibrant colors and textures to shine.
