1 block (14 oz) firm tofu, pressed and cubed

1 tablespoon cornstarch

2 tablespoons sesame oil, divided

1 cup fresh cherries, pitted and halved

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup (for a vegan option)

1-inch piece of ginger, grated

2 cloves garlic, minced

1 red bell pepper, diced

1 carrot, shredded

1 small cucumber, thinly sliced

1 bundle of romaine or butter lettuce leaves

Sesame seeds, for garnish

Fresh cilantro or mint, for garnish

Instructions
 

Prepare the Tofu:

    - After pressing the tofu to remove excess moisture, cut it into bite-sized cubes. This helps the tofu absorb flavors and become crispy.

      - In a bowl, toss the tofu cubes with cornstarch until they are evenly coated. This will create a crispy texture when cooked.

        Cook the Tofu:

          - Heat 1 tablespoon of sesame oil in a non-stick skillet over medium-high heat. Ensure the oil is hot before adding tofu.

            - Carefully add the coated tofu cubes to the skillet and cook for 8-10 minutes, turning occasionally, until all sides are golden brown and crispy. Once cooked, remove the tofu from the skillet and set aside on a plate.

                - In the same skillet, add the remaining tablespoon of sesame oil. The residual flavors from the tofu will enhance the glaze.

                  - Add grated ginger and minced garlic, sautéing for approximately 30 seconds until fragrant and golden.

                    - Add the halved cherries, soy sauce, rice vinegar, and honey (or maple syrup) to the skillet.

                      - Allow the mixture to simmer for about 5 minutes, stirring occasionally, until the cherries soften and the glaze thickens. Then, gently fold in the cooked tofu, stirring to ensure it is well-coated and heated through.

                          - While the glaze simmers, prep the fresh vegetables: take the diced bell pepper, shredded carrot, and sliced cucumber, and arrange them on a plate for easy assembly.
