Ingredients

2 cans (5 oz each) tuna packed in water, drained

1/4 cup plain Greek yogurt

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1/4 cup diced celery

1/4 cup diced red bell pepper

1/4 cup chopped green onions

Salt and pepper to taste

8 large lettuce leaves (Romaine or Butter lettuce are ideal)

For the Blueberry Glaze:

1 cup fresh or frozen blueberries

1/4 cup water

2 tablespoons honey or maple syrup

1 tablespoon balsamic vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

Instructions

Prepare the Blueberry Glaze:

    - In a small saucepan, combine the blueberries, water, honey (or maple syrup), and balsamic vinegar.

      - Bring this mixture to a gentle simmer over medium heat, stirring occasionally until the blueberries begin to burst and release their juices.

        - Add the cornstarch slurry (the cornstarch mixed with water) to the saucepan to help thicken the glaze. Continue to simmer for an additional 2-3 minutes, stirring frequently, until the glaze reaches your desired consistency.

          - Once thickened, remove the saucepan from heat and set aside to cool.

            Make the Tuna Filling:

              - In a sizeable mixing bowl, add the drained tuna, Greek yogurt, mayonnaise, and Dijon mustard. Stir well until the mixture is smooth and creamy.

                - Gently fold in the diced celery, red bell pepper, and chopped green onions. Season your tuna filling with salt and pepper to taste.

                  Assemble the Wraps:

                    - Take one lettuce leaf and place a generous spoonful of the tuna mixture in the center.

                      - Drizzle a bit of the blueberry glaze over the tuna filling for added flavor.

                        - Carefully wrap the lettuce leaf around the filling, securing the contents as best as you can. Repeat this process with the remaining lettuce leaves and tuna filling.

                          Serve:

                            - Arrange the assembled tuna lettuce wraps on a serving platter. For a finishing touch, drizzle any remaining blueberry glaze on top, if desired, and serve immediately for the freshest taste.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 (2 wraps each)

                                - Presentation Tips: Serve the wraps on a vibrant platter, garnished with additional blueberries and a sprinkle of chopped green onions for a pop of color.
