Ingredients

1 cup grated zucchini (approximately 1 medium zucchini)

1 cup rolled oats

1/2 cup natural almond butter or peanut butter

1/2 cup chocolate protein powder

1/4 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/4 teaspoon sea salt

1/2 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional, for added crunch)

Instructions

Prepare the Zucchini: Start by grating the zucchini. Once grated, place it in a clean kitchen towel or cheesecloth and twist to squeeze out any excess moisture. This is essential to keep your mixture from becoming too wet.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chocolate protein powder, unsweetened cocoa powder, and sea salt. Use a whisk or spoon to mix thoroughly, ensuring all dry ingredients are well blended.

Combine Wet Ingredients: In a separate bowl, mix together the grated zucchini, almond or peanut butter, honey (or maple syrup), and vanilla extract. Stir until all ingredients are smoothly combined and well integrated.

Combine the Mixtures: Gradually add the wet mixture into the bowl with the dry ingredients. Stir gently until the two mixtures are well integrated and the consistency is thick yet moldable. If using, fold in the mini chocolate chips and chopped nuts for extra texture.

Shape the Balls: Scoop out small portions of the dough, about 1 inch in diameter, and use your hands to roll them into balls. If the mixture is sticky, dampen your hands slightly with water to make rolling easier.

Chill the Protein Balls: Place the formed protein balls on a parchment-lined baking sheet. Transfer the sheet to the refrigerator and let it chill for at least 30 minutes, allowing the balls to firm up and set.

Serve and Store: Enjoy these nutritious zucchini chocolate protein balls as a delicious snack or post-workout treat. Any leftovers can be stored in an airtight container in the refrigerator for up to one week.

Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 12-15 balls

                  - Presentation Tips: For a delightful presentation, arrange the protein balls in a colorful bowl and sprinkle with a few extra chocolate chips or chopped nuts on top before serving.
