Zucchini Falafel Bites

2 medium zucchinis, grated and excess moisture squeezed out

1 cup canned chickpeas, drained and rinsed

1/2 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

3 green onions, finely chopped

2 garlic cloves, minced

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp paprika

1/4 tsp cayenne pepper (optional, for heat)

1/2 tsp baking powder

1/2 cup all-purpose flour (or chickpea flour for gluten-free)

Salt and pepper, to taste

Oil for frying (such as olive oil or vegetable oil)

Prepare the Zucchini: Start by grating the zucchinis into a large mixing bowl. Sprinkle a small pinch of salt over the grated zucchini and let it rest for about 10 minutes. This will help draw out excess moisture. After 10 minutes, take a clean kitchen towel or cheesecloth, place the grated zucchini inside, and wring it out thoroughly to remove as much moisture as possible. This step is crucial for achieving crispy bites.

    Blend the Chickpeas: In a food processor, combine the drained chickpeas, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper (if you're using it), baking powder, and a pinch of salt and pepper. Pulse the mixture until it’s well combined but still slightly chunky; the goal is to maintain some texture for the falafel.

      Combine Ingredients: Transfer the chickpea mixture to a large mixing bowl. Add in the previously prepared grated zucchini, along with the finely chopped parsley, cilantro, and green onions. Use a spatula or a wooden spoon to mix everything together until well incorporated.

        Add Flour: Slowly sprinkle in the all-purpose flour. Stir gently until everything is combined, being cautious not to overmix. The mixture should feel moist yet firm enough to hold together when formed into small balls or patties. If the mixture is too wet, add a little more flour or chickpea flour until the desired consistency is reached.

          Form the Bites: Using your hands, take small portions of the mixture and roll them into balls or shape them into patties that are about 1-1.5 inches in diameter. Place them on a plate as you go.

            Fry: In a large frying pan, pour in about 1/2 inch of oil and heat it over medium heat until it’s shimmering. Once the oil is hot, carefully add the falafel bites in batches, being sure not to overcrowd the pan. Fry for 3-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to remove the bites from the oil and place them on a plate lined with paper towels to drain excess oil.
