2 medium zucchinis

1 cup grated Parmesan cheese

1 cup panko breadcrumbs (for extra crunch!)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). While it’s heating, line a large baking sheet with parchment paper to prevent sticking and to ensure easy cleanup.

    Prepare the Zucchini: Wash the zucchinis thoroughly and slice them into approximately ¼-inch thick rounds. Arrange the slices on a clean kitchen towel and sprinkle them lightly with salt. Allow them to sit for 10-15 minutes. This process will draw out excess moisture, which is key for achieving crispy results.

      Make the Coating: In a medium-sized mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Stir well until all ingredients are evenly mixed.

        Prepare the Egg Wash: In a separate bowl, crack the two large eggs and whisk them thoroughly until the yolks and whites are fully combined.
