Ingredients

12 large cremini or Portobello mushrooms

1 cup cream cheese, softened to room temperature

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional for a spicy kick)

1/4 cup fresh parsley, finely chopped

1/2 teaspoon onion powder

Salt and black pepper, to taste

Olive oil spray or 1 tablespoon olive oil for brushing

Instructions

Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C). Allow it to heat for about 3-5 minutes while you prepare the mushrooms.

Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth to remove any dirt. Carefully remove the stems by twisting them out or using a small knife. Ensure you create enough space in the caps for stuffing. You can keep the stems for another recipe or finely chop them and mix into the filling.

Make the Filling: In a medium-sized mixing bowl, combine the softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, and optional red pepper flakes. Add the chopped parsley, onion powder, and season with salt and black pepper. Mix all ingredients thoroughly until the mixture is creamy and well combined.

Stuff the Mushrooms: Using a small spoon or a piping bag for precision, generously fill each mushroom cap with the creamy cheese mixture. Gently press down to pack the filling, but take care not to let it overflow.

Prepare for Air Frying: Lightly coat the air fryer basket with olive oil spray or brush the tops of the stuffed mushrooms lightly with olive oil. This step will promote a desirable golden and crispy texture during cooking.

Air Fry the Mushrooms: Arrange the stuffed mushrooms in a single layer in the air fryer basket. Depending on your air fryer size, you may need to cook in batches. Air fry the mushrooms at 350°F (175°C) for 10-12 minutes or until the mushrooms are tender and the tops are beautifully golden brown.

Serve: Once done, carefully lift the mushrooms out of the air fryer and allow them to cool slightly. Optional: garnish with additional chopped parsley for freshness before serving warm as a delightful appetizer or side dish.
