Ingredients

2 cups rolled oats

2 ½ cups almond milk (or your preferred milk)

2 medium apples, peeled, cored, and diced

1/2 cup brown sugar (or substitute with maple syrup for a healthier alternative)

1/4 cup unsweetened applesauce

1/3 cup raisins or chopped walnuts (optional for added texture)

1 tsp vanilla extract

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp salt

2 tbsp melted coconut oil (or butter for richer flavor)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking dish by greasing it with coconut oil or lining it with parchment paper for easy removal later.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, nutmeg, and salt. Stir thoroughly to ensure that all dry ingredients are evenly incorporated.

Mix Wet Ingredients: In a separate bowl, whisk together the almond milk, brown sugar, applesauce, vanilla extract, and melted coconut oil until the mixture is smooth and well blended.

Incorporate Diced Apples: Gently fold the diced apples and optional raisins or walnuts into the wet ingredients. This step will help evenly distribute the apples throughout the oatmeal mixture.

Combine Mixtures: Gradually pour the wet mixture into the bowl containing the dry ingredients. Stir gently until just combined, taking care not to overmix, which could compromise the texture.

Transfer to Baking Dish: Pour the prepared mixture into the greased or lined baking dish. Use a spatula to evenly spread and smooth out the mixture, ensuring a level surface.

Bake: Place the baking dish in the preheated oven. Bake for 30-35 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.

Cool & Slice: Once baked, remove the dish from the oven and allow the oatmeal squares to cool in the baking dish for about 10-15 minutes. This cooling period will help them maintain their shape when sliced.

Serve: Enjoy your baked oatmeal squares warm or at room temperature. Serve them plain or enhance with your choice of toppings, such as a drizzle of maple syrup, a dollop of yogurt, or additional apple slices for an extra touch.
