Baked Buffalo Chicken Egg Rolls

2 cups shredded cooked chicken

1/2 cup buffalo sauce (adjust according to your spice preference)

1/2 cup cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1 cup shredded carrots

1/2 cup green onions, finely chopped

12 egg roll wrappers

Cooking spray

Blue cheese or ranch dressing, for dipping

Optional: celery sticks, for serving

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, buffalo sauce, softened cream cheese, shredded cheddar cheese, shredded carrots, and chopped green onions. Use a spatula or spoon to mix the ingredients thoroughly until the mixture is well combined and creamy.

      Assemble the Egg Rolls: Take one egg roll wrapper and place it on a clean, flat surface with one corner pointed towards you (like a diamond shape). Spoon approximately 2-3 tablespoons of the chicken filling near the center of the wrapper. Fold the bottom corner over the filling, then bring in the two side corners towards the center. Carefully roll the wrapper upwards towards the top corner to form a tight roll, sealing the edge with a small amount of water if necessary.

        Repeat the Process: Continue assembling the egg rolls until all of the filling has been used up. This recipe should yield about 10-12 egg rolls.

          Bake the Egg Rolls: Arrange the assembled egg rolls seam-side down on the prepared baking sheet.
