Ingredients

2 medium zucchinis

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing

Instructions

Prepare the Zucchini: Start by preheating your oven to 225°F (110°C). Thoroughly wash the zucchinis under cold running water, then slice them into thin rounds, aiming for about 1/8-inch thickness. For consistent slices, consider using a mandoline slicer.

Remove Excess Moisture: Transfer the zucchini slices to a colander and evenly sprinkle them with salt. Allow them to sit for approximately 30 minutes. This process helps extract excess moisture, resulting in crispier chips. After 30 minutes, use a paper towel to gently pat the zucchini slices dry, removing any moisture.

Mix the Cheese Coating: In a medium mixing bowl, combine the shredded sharp cheddar cheese, grated Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and any additional seasonings you enjoy. Stir the mixture well until all ingredients are thoroughly incorporated.

Coat the Zucchini: Line a baking sheet with parchment paper for easy removal. Arrange the zucchini slices in a single layer on the prepared baking sheet. To help the cheese adhere better, lightly spray the zucchini slices with cooking spray or brush them with a thin layer of olive oil. Generously distribute the cheese mixture over each slice, pressing down slightly to ensure it sticks.

Bake: Carefully place the baking sheet in the preheated oven and bake for approximately 2 to 3 hours, or until the zucchini chips turn golden brown and crisp. Keep an eye on them as they bake, rotating the baking sheet halfway through if necessary for uniform crispiness.

Cool and Serve: Once they are baked to perfection, remove the chips from the oven and let them cool on the baking sheet for a few minutes. They will continue to crisp up as they cool. Serve the chips warm as a delightful snack, or store them in an airtight container to enjoy later.
