Ingredients

1 cup ripe bananas, mashed (approximately 2 medium-sized bananas)

1/4 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/3 cup unsweetened almond milk (or any milk of your choice)

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour (substitute with whole wheat flour for a healthier option)

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare your donut pan by greasing it with non-stick spray or lightly brushing it with oil to ensure the donuts release easily after baking.

Combine Wet Ingredients: In a large mixing bowl, add the mashed bananas, applesauce, honey (or maple syrup), almond milk, and vanilla extract. Use a whisk or fork to blend the ingredients well until you achieve a smooth and creamy mixture.

Mix Dry Ingredients: In a separate bowl, combine the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Whisk these dry ingredients together thoroughly until they are evenly mixed.

Combine Mixtures: Gradually incorporate the dry ingredient mixture into the wet mixture. Gently lift and fold the flour mixture into the wet ingredients, being careful not to overmix. It's perfectly fine if there are a few lumps; this will keep the donuts fluffy.

Fill the Pan: To make filling the donut cavities easier, transfer the batter into a piping bag or a zip-top bag with one corner snipped off. Fill each donut cavity approximately 2/3 full to allow room for rising without overflow during baking.

Bake: Place the filled donut pan into the preheated oven and bake for approximately 12-15 minutes. The donuts are done when a toothpick inserted into the center comes out clean, and they should feel soft and springy to the touch.

Cool and Coat: After baking, allow the donuts to cool in the pan for about 5 minutes. Carefully transfer them to a wire rack to cool completely. Meanwhile, in a bowl, mix the granulated sugar and ground cinnamon together. While the donuts are still warm, roll each one in this cinnamon-sugar mixture until they are evenly coated.

Serve: Allow the coated donuts to cool slightly before serving. These delightful treats are best enjoyed fresh, but they can also be stored in an airtight container for up to 2 days for a tasty snack later on.
