1 cup Arborio rice (or any short-grain rice)

300g block feta cheese

250g mushrooms (button or cremini), thinly sliced

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups vegetable broth

1 cup cherry tomatoes, halved

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Sea salt and freshly cracked black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Zest of 1 lemon

Preheat the Oven: Begin by preheating your oven to 200°C (400°F). This ensures it’s hot enough to achieve optimal baking.

    Combine Ingredients: In a large, oven-safe baking dish, add the Arborio rice, sliced mushrooms, finely chopped onion, minced garlic, and halved cherry tomatoes. Pour in the olive oil, followed by the dried oregano, sea salt, and freshly cracked black pepper. Mix everything thoroughly until all ingredients are evenly distributed.

      Add Broth: Carefully pour the vegetable broth over the mixed ingredients, stirring gently to make sure the rice is well interspersed with the vegetables.

        Prepare the Feta: Create a well in the center of the rice mixture and place the block of feta cheese inside it. Drizzle a little olive oil over the feta cheese and sprinkle some extra oregano and black pepper on top for added flavor, if desired.
