Ingredients

400g penne pasta

200g block of feta cheese

3 large red bell peppers, cut into strips

1 medium red onion, sliced

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon red chili flakes (adjust to taste)

1/4 cup extra virgin olive oil

Salt and pepper to taste

Fresh basil, for garnish

Zest and juice of 1 lemon

1/2 cup cherry tomatoes, halved (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 200°C (400°F).

Prepare the Vegetables: In a spacious baking dish, evenly spread out the sliced red bell peppers and red onion. Drizzle them with about 2 tablespoons of the extra virgin olive oil, then season generously with salt, freshly ground black pepper, dried oregano, and red chili flakes. Toss everything together until the vegetables are well coated.

Add Feta: Create a little well in the center of the vegetable mixture and place the block of feta cheese there. Drizzle the remaining olive oil over the feta, and sprinkle a bit more oregano, salt, and pepper over the top for added flavor.

Roast: Transfer the baking dish to your preheated oven and roast for approximately 25-30 minutes. The peppers should become tender, and the feta will turn soft and golden, enhancing its creamy texture.

Cook Pasta: While the veggies are roasting, bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until it is al dente. Once cooked, drain the pasta and set it aside.

Combine Ingredients: When the feta and peppers are done roasting, carefully remove the baking dish from the oven. Using a fork, mash the feta cheese directly in the dish, mixing it with the roasted peppers and onions to create a creamy sauce. If you choose to include cherry tomatoes, add them now along with the lemon zest and lemon juice for a refreshing touch.

Mix Pasta and Sauce: Add the cooked penne pasta to the baking dish and gently toss everything together with the creamy vegetable mixture until the pasta is well coated. Taste and adjust the seasoning with additional salt and pepper if desired.

Serve: To finish, garnish the dish with fresh basil leaves and an extra drizzle of olive oil for a vibrant look. Serve the pasta hot and savor every delightful bite!

Presentation Tips: For an appealing presentation, consider plating the pasta in shallow bowls, and top each serving with a few extra basil leaves and a sprinkle of chili flakes for a pop of color.
