1 lb ground beef (or substitute with ground turkey for a lighter alternative)

1 cup fresh spinach, finely chopped (or use ½ cup frozen spinach, thawed and well-drained)

1 cup Italian-seasoned breadcrumbs

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese, divided

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning blend

Salt and freshly cracked pepper to taste

2 cups marinara sauce (for serving)

Optional: fresh basil leaves, for garnish

Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

    In a large mixing bowl, combine the ground beef (or turkey) with the chopped spinach, breadcrumbs, half of the shredded mozzarella, and Parmesan cheese.

      Crack the egg into the bowl and add the minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix all the ingredients together thoroughly using your hands, ensuring not to overmix to keep the meatballs tender.

        Using your hands, shape the mixture into meatballs approximately 1-1.5 inches in diameter. Arrange the meatballs on the prepared baking sheet, leaving space between each for even cooking.

          Once formed, sprinkle the remaining mozzarella cheese on top of each meatball to create a delightful cheesy crust while they bake.

            Place the baking sheet in the preheated oven and bake for 18-20 minutes, or until the meatballs are cooked through and reach an internal temperature of 160°F (70°C).
