2 cups cooked shredded chicken

1/2 cup buffalo wing sauce (adjust based on your preferred spice level)

1 tablespoon olive oil

8 flour tortillas (either uncooked or pre-cooked)

2 cups shredded sharp cheddar cheese

2 cups shredded mozzarella cheese

1/2 cup diced green onions (optional, for garnish)

1/4 cup crumbled blue cheese (optional, for garnish)

Sour cream or ranch dressing (for dipping)

Instructions
 

Prep the Chicken Filling: In a large bowl, combine the cooked shredded chicken with the buffalo wing sauce, thoroughly mixing until all the chicken is well-coated. Taste the mixture and add more buffalo sauce if you desire additional heat.

    Heat the Pan: Place a large skillet over medium heat and add the olive oil. A non-stick griddle can also be used if available, allowing for more quesadillas to be cooked at once.

      Assemble the Quesadilla: Lay one tortilla flat on a clean surface. Spoon a quarter of the chicken mixture onto one half of the tortilla. Evenly sprinkle about 1/4 cup of sharp cheddar cheese and 1/4 cup of mozzarella cheese over the chicken.

        Fold and Cook: Carefully fold the tortilla in half, pressing down gently to seal the edges. Transfer the folded quesadilla into the hot skillet. Cook for approximately 3-4 minutes until the bottom side is golden brown. Carefully flip the quesadilla and cook for another 3-4 minutes until the cheese is melted and the tortilla is crispy.

          Keep Warm and Repeat: Once cooked, remove the quesadilla from the skillet and place it in a warm oven to keep it hot while you repeat the assembly and cooking process for the remaining quesadillas.

            Stack and Serve: After all the quesadillas are cooked, stack two or three on a serving plate. Cut each stack into triangles for easy serving. If desired, sprinkle the top with diced green onions and crumbled blue cheese for added flavor and visual appeal.
