1 small onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) enchilada sauce

8 corn tortillas, cut into strips

2 cups shredded cheddar cheese, divided

1 cup diced tomatoes (fresh or canned)

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (optional, for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking.

    Cook the Ground Beef: In a large skillet set over medium heat, add the ground beef. Use a spatula to break it into smaller pieces. Cook the beef, stirring occasionally, until it's well-browned, approximately 5-7 minutes. Drain any excess grease from the skillet to keep the casserole from being greasy.

      Sauté the Onion and Garlic: To the browned beef, add the finely chopped onion and minced garlic. Sauté these ingredients together for 3-4 minutes, or until the onion becomes translucent and fragrant.

        Mix in Remaining Ingredients: Stir in the black beans, diced tomatoes, enchilada sauce, ground cumin, chili powder, and season to taste with salt and pepper. Allow the mixture to simmer for about 5 minutes, stirring occasionally, to let the flavors combine beautifully.

          Layer the Casserole: In a 9x13 inch baking dish, begin by layering half of the tortilla strips evenly across the bottom. Pour half of the beef mixture over the tortillas, then sprinkle with 1 cup of the shredded cheddar cheese. Repeat this layering process with the remaining tortilla strips, beef mixture, and top with the last cup of cheese.
