1 can (15 oz) chickpeas, drained and thoroughly rinsed

1 cup cherry tomatoes, halved

1 bell pepper (any color), finely diced

1/2 small red onion, finely chopped

1/4 cup pitted olives (black or green), sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, finely chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and freshly cracked pepper, to taste

Cook the Pasta: Begin by filling a large pot with water and adding a generous pinch of salt. Bring it to a boil over high heat. Once boiling, add the pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. After cooking, drain the pasta in a colander and rinse it under cold running water to swiftly cool it down, which will prevent it from becoming mushy. Set aside.

    Prepare the Vegetables: In a large mixing bowl, add the drained chickpeas, halved cherry tomatoes, diced cucumber, diced bell pepper, finely chopped red onion, sliced olives, crumbled feta (if using), and freshly chopped parsley. Gently combine these ingredients to ensure an even distribution.
