1 cup feta cheese, crumbled

1/3 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 teaspoon garlic powder (optional)

Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add the tri-color rotini pasta and cook according to package instructions, usually about 8-10 minutes, until it reaches an al dente texture. Once done, drain the pasta in a colander and rinse it under cold running water to halt the cooking process. This will cool it down and keep the pasta firm. Transfer the cooled pasta to a large mixing bowl.

    Prep the Veggies: While the pasta is cooling, wash and chop the vegetables. Halve the cherry tomatoes; dice the cucumber and bell pepper into bite-sized pieces; finely chop the red onion and fresh parsley. Add all these vibrant vegetables to the bowl with the cooled pasta.
