1 lb large shrimp, peeled and deveined

1 ripe avocado, diced into cubes

2 cups mixed greens (a blend of arugula, spinach, and kale)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cucumber, diced

1/4 cup fresh cilantro, chopped

2 tablespoons extra virgin olive oil

1 tablespoon freshly squeezed lime juice

1 teaspoon honey (optional for a touch of sweetness)

Salt and freshly ground black pepper, to taste

Lime wedges, for garnish

Cook the Shrimp: In a large pot, bring a generous amount of salted water to a boil over medium-high heat. Add the shrimp to the boiling water and cook for 2-3 minutes, or until the shrimp turn vibrant pink and are fully cooked. Once done, promptly remove the pot from heat, drain the shrimp, and transfer them immediately to a bowl filled with ice water. This halts the cooking process. Let the shrimp chill for about 5 minutes, then drain again and pat dry with paper towels.

    Prepare the Dressing: In a small mixing bowl, combine the extra virgin olive oil, fresh lime juice, and honey (if you opt for sweetness). Season with salt and freshly ground black pepper to taste. Whisk the mixture until well combined, and set aside to let the flavors meld.

      Assemble the Salad: In a large salad bowl, add the mixed greens, halved cherry tomatoes, finely chopped red onion, diced cucumber, and chopped cilantro. Gently toss these ingredients together to ensure they are evenly distributed.
