2 cups fresh corn kernels (or 1 can of corn, drained and rinsed)

1 ripe avocado, diced into bite-size pieces

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/4 cup fresh cilantro, chopped (plus extra for garnish)

Juice of 1 lime

2 tablespoons extra virgin olive oil

1 teaspoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

Optional: 1 jalapeño, seeded and minced for an extra kick

Prepare the Corn: If you are using fresh corn, bring a pot of water to a rolling boil. Carefully add the corn kernels and boil for about 4-5 minutes, or until they are tender yet crisp. Drain the corn and set it aside to cool. For canned corn, simply drain and rinse it under cold water to remove excess sodium.

    Combine Ingredients: In a large mixing bowl, add the cooled corn kernels, diced avocado, halved cherry tomatoes, and finely chopped red onion. Gently fold the ingredients together to create a colorful mixture.

      Make the Dressing: In a separate small bowl, whisk together the lime juice, olive oil, honey (or maple syrup), salt, and pepper until the mixture is well emulsified and smooth.

        Mix it All Together: Drizzle the dressing over the salad mixture, then sprinkle in the chopped cilantro. If you prefer a bit of heat, add the minced jalapeño. Using a large spoon, gently toss all the ingredients together until they are evenly coated with the dressing.
