Creamy Alfredo Spinach Pasta Shells

2 cups fresh spinach, roughly chopped

1 cup ricotta cheese

1 cup freshly grated Parmesan cheese, plus extra for topping

1 cup heavy cream

1/2 teaspoon freshly grated nutmeg

1 tablespoon olive oil

Cook the Pasta: In a large pot, bring salted water to a vigorous boil. Carefully add the pasta shells and cook according to the package instructions until they are al dente, typically about 10-12 minutes. Once cooked, drain the shells in a colander and set aside to cool slightly.

    Prepare the Alfredo Sauce: In a medium saucepan over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté for approximately 1 minute until it becomes fragrant but not browned. Lower the heat to a gentle simmer, then stir in the heavy cream, garlic powder, freshly grated nutmeg, and a pinch of salt and black pepper. Allow the sauce to simmer for about 5 minutes, stirring occasionally, until it thickens slightly.
