Creamy Basil Chicken Zoodle Bowls

2 medium zucchinis, spiralized into zoodles

1 lb (450 g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup heavy cream

1 cup fresh basil leaves, tightly packed

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper, to taste

Grated Parmesan cheese, for garnish

Pinch of red pepper flakes (optional for a spicy kick)

Prepare the Zoodles: Use a spiralizer to turn the zucchinis into zoodles. Place the zoodles in a colander and sprinkle lightly with salt. Allow them to sit for about 15 minutes to drain excess moisture, which helps to keep them from becoming soggy.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Season the diced chicken pieces generously with salt and pepper. Add the chicken to the skillet and sauté for approximately 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Once fully cooked, remove the chicken from the skillet and set it aside on a plate.

      Make the Creamy Basil Sauce: In the same skillet, reduce the heat to medium. Add the minced garlic to the remaining oil and sauté for about 1 minute, or until the garlic becomes fragrant (be careful not to burn it!). Gradually pour in the heavy cream, stirring to combine, and let it simmer for a couple of minutes. Add the fresh basil leaves and blend the mixture using an immersion blender until smooth and creamy. If you don’t have an immersion blender, you can transfer the sauce to a regular blender, blend until smooth, and then return it to the skillet.

        Combine Ingredients: Return the cooked chicken to the skillet and thoroughly coat it with the creamy basil sauce. Stir in the halved cherry tomatoes and heat everything together for another 2-3 minutes, just until the tomatoes are warmed through.

          Add the Zoodles: Gently fold the drained zoodles into the skillet, cooking for an additional 2-3 minutes. The goal is to warm the zoodles without overcooking them, allowing them to maintain a pleasant texture.

            Serve: Portion the creamy chicken and zoodle mixture into bowls. Generously sprinkle with grated Parmesan cheese and add a pinch of red pepper flakes for those who enjoy a touch of heat.
