This dish has been a staple in my household for years, and each time I prepare it, I am transported back to my childhood kitchen, where the inviting aroma would fill the air, promising a satisfying meal. Creamy Chicken & Rice Casserole

2 cups shredded or diced cooked chicken

1 cup long-grain white rice, uncooked

3 cups chicken broth

1 cup heavy cream

1 medium onion, finely chopped

2 cloves garlic, minced

1 ½ cups frozen mixed vegetables (such as peas, carrots, and corn)

1 cup shredded cheddar cheese

1 teaspoon dried thyme

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature while you prepare the casserole.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent and fragrant. Then, add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

      Combine Ingredients: In a spacious mixing bowl, combine the shredded or diced cooked chicken, uncooked long-grain white rice, chicken broth, heavy cream, the sautéed onion and garlic mixture, frozen mixed vegetables, dried thyme, paprika, black pepper, and salt. Mix thoroughly until all ingredients are evenly distributed.

        Prepare for Baking: Carefully pour the chicken and rice mixture into a greased 9x13 inch casserole dish. Use a spatula to spread the mixture evenly across the dish, ensuring an even cooking surface.

          Bake Covered: Cover the casserole dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes to allow the flavors to meld and the rice to begin cooking.

            Add Cheese and Continue Baking: After the initial 30 minutes, carefully remove the foil and sprinkle the shredded cheddar cheese generously on top of the casserole. Return the dish to the oven, uncovered, and bake for an additional 15-20 minutes. The casserole is done when the rice is tender and the cheese is melted, bubbly, and golden brown.

              Cool and Garnish: Once baking is completed, remove the casserole from the oven and let it cool for about 5 minutes to set. Before serving, garnish with freshly chopped parsley for a bright, flavorful touch.
