Ingredients

8 oz (225g) fresh mushrooms (cremini or button), sliced

1 tablespoon olive oil

2 tablespoons unsalted butter

2 garlic cloves, minced

½ cup heavy cream

½ cup grated Parmesan cheese

Salt and freshly ground black pepper, to taste

¼ teaspoon dried thyme (or 1 teaspoon fresh thyme, finely chopped)

1 tablespoon fresh parsley, chopped (for garnish)

4 slices of rustic bread (sourdough or ciabatta work well)

1 tablespoon balsamic glaze (optional, for drizzling)

Instructions

Sauté the Mushrooms: In a large skillet, heat the olive oil along with 1 tablespoon of butter over medium-high heat. Add the sliced mushrooms to the skillet and cook for approximately 5-7 minutes. Stir occasionally until the mushrooms are nicely browned and tender.

Add Garlic and Cream: Once the mushrooms are cooked, reduce the heat to medium-low and incorporate the minced garlic. Sauté for about 1 minute, stirring until fragrant. Gradually pour in the heavy cream, allowing the mixture to simmer gently.

Incorporate Cheese: While the cream is simmering, sprinkle the grated Parmesan cheese into the skillet. Stir continuously until the cheese melts completely, resulting in a smooth and creamy sauce. Season with salt, pepper, and thyme to taste. Let the sauce simmer for an additional 2-3 minutes until it thickens slightly.

Toast the Bread: While the mushroom mixture simmers, preheat your oven's broiler. Place the slices of rustic bread on a baking sheet, then toast them under the broiler for about 2-3 minutes on each side, or until they are golden brown and crispy. Keep a close watch to prevent burning!

Assemble the Toasts: Once the bread is toasted to perfection, remove it from the oven. With a spoon, generously distribute the creamy mushroom mixture over each slice of warm toasted bread.

Garnish and Serve: If desired, drizzle with balsamic glaze for an extra flavor kick and garnish with chopped parsley for a vibrant touch. Serve immediately while the toasts are warm and the mushrooms are delectably creamy. Enjoy every bite!
