12 oz fettuccine pasta

2 cups fresh spinach, chopped

3 tablespoons unsalted butter

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning blend

Salt and freshly ground black pepper, to taste

1/4 teaspoon ground nutmeg (optional)

Fresh basil or parsley for garnish (optional)

Cook the pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the fettuccine pasta and cook according to the package directions until it is al dente. Before draining, carefully reserve 1 cup of the pasta water. Drain the pasta in a colander and set aside.

    Sauté garlic and spinach: In the same pot used for the pasta, melt the unsalted butter over medium heat. Once melted, add the minced garlic and sauté for approximately 1 minute, or until fragrant and golden. Next, incorporate the chopped spinach into the pot and cook for about 2-3 minutes, stirring frequently, until the spinach is completely wilted.

      Prepare the Alfredo sauce: Lower the heat to a gentle simmer and pour in the heavy cream. Stir well to combine and let it heat through, but avoid bringing it to a boil. Gradually whisk in the grated Parmesan cheese, continuing to stir until it is fully melted and the sauce becomes smooth. If the sauce appears too thick, gradually stir in a bit of the reserved pasta water until you achieve your desired creaminess.

        Season the sauce: Sprinkle in the Italian seasoning and ground nutmeg (if using), then taste the sauce. Adjust the flavor with salt and freshly ground black pepper according to your preference.

          Combine pasta and sauce: Gently add the drained fettuccine to the Alfredo sauce, carefully tossing the pasta to ensure every strand is evenly coated with the creamy sauce. If the mixture seems too thick, add additional reserved pasta water, a little at a time, until you reach your ideal consistency.
