8 oz linguine or fettuccine pasta

1 lb shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes with juices

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional, for added heat)

Salt and freshly ground black pepper to taste

1/2 cup fresh basil, chopped

Lemon wedges, for serving

Cook the Pasta: Bring a large pot of water to a rolling boil and add a generous amount of salt. Add the linguine or fettuccine and cook according to the package directions until al dente. Before draining, reserve about 1 cup of the pasta water. Drain the pasta and set it aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp to the skillet and season generously with salt and pepper. Cook for about 2-3 minutes on each side until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside on a plate.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for approximately 30 seconds, or until it's fragrant and golden. Pour in the can of diced tomatoes, including their juices. Stir in the dried oregano, red pepper flakes (if using), and additional salt and pepper to taste. Allow this mixture to simmer for about 5 minutes, letting the flavors meld.

        Make it Creamy: Lower the heat to a gentle simmer and gradually stir in the heavy cream. Continue simmering for another 3-4 minutes, stirring occasionally, until the sauce begins to thicken slightly.

          Combine: Return the cooked pasta and shrimp to the skillet. Toss everything together, ensuring each strand of pasta is well coated in the creamy tomato sauce. If the sauce is too thick, slowly add some of the reserved pasta water until the desired consistency is achieved.
