Ingredients

2 large cucumbers

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise (or substitute with Greek yogurt for a lighter choice)

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 cup celery, finely chopped

1/4 cup red onion, finely chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and black pepper, to taste

Optional: Cherry tomatoes, halved, for garnish

Instructions

Prepare the Cucumbers: Start by rinsing the cucumbers thoroughly under cold running water. Carefully slice each cucumber in half lengthwise and use a small spoon or melon baller to scoop out the seeds, creating a hollow “boat” to hold the filling.

Make the Tuna Salad: In a medium-sized mixing bowl, add the drained tuna. Incorporate the mayonnaise (or Greek yogurt), Dijon mustard, and fresh lemon juice into the bowl. Use a fork to mix everything together until the ingredients are smoothly blended.

Add Veggies: Gently fold in the finely chopped celery, red onion, and fresh dill to the tuna mixture. Season generously with salt and black pepper to taste. Stir once more until all ingredients are well mixed and evenly distributed.

Stuff the Cucumbers: Using a spoon or piping bag, generously fill each cucumber half with the creamy tuna salad mixture. Ensure they are filled to the brim so you can savor every bite of this tasty treat!

Garnish and Serve: For an attractive presentation, garnish each filled cucumber with halved cherry tomatoes, adding a burst of color and flavor. Arrange your stuffed cucumbers neatly on a serving platter to serve.

Chill (Optional): For an extra refreshing experience, consider chilling the stuffed cucumbers in the refrigerator for 15 to 30 minutes before serving. This enhances the flavors and provides a cool, crisp texture.

Enjoy your Creamy Tuna Salad Stuffed Cucumbers as a light lunch, an elegant appetizer, or a delightful snack!
