Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (you can substitute with gluten-free flour for a gluten-free option)

1 cup buttermilk (or for a dairy-free version, mix 1 cup plant-based milk with 1 tablespoon vinegar)

1 cup breadcrumbs (preferably panko for an extra crunchy texture)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust according to your heat preference)

Salt and pepper to taste

Cooking spray or olive oil for drizzling

Optional: Chopped fresh parsley for garnish

Instructions

Preheat the Oven: Set your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Cauliflower: In a large mixing bowl, add the cut cauliflower florets. Season them with a pinch of salt and pepper, tossing them to ensure they are evenly coated. Set the bowl aside for a moment.

Make the Batter: In a separate bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and a pinch of salt. Gradually whisk in the buttermilk until you achieve a smooth batter, ensuring there are no lumps.

Bread the Cauliflower: Take each cauliflower floret and dip it into the batter, making sure it is thoroughly coated. Next, roll the battered floret in the breadcrumbs until it is completely covered. Arrange the breaded florets on the lined baking sheet in a single layer.

Bake: To achieve golden-brown poppers, lightly spray the breaded cauliflower with cooking spray or drizzle with olive oil. Bake in the preheated oven for about 25-30 minutes. Remember to flip the florets halfway through baking to ensure even crispiness.

Serve: Once baked, remove the cauliflower poppers from the oven and allow them to cool for a couple of minutes. If you like, garnish with freshly chopped parsley for added color and freshness. These delicious poppers can be enjoyed as is or paired with your favorite dipping sauce, such as ranch dressing or buffalo sauce.
