1 lb fresh figs, stems removed and quartered

1 cup granulated sugar

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

Pinch of salt

1/2 cup chopped walnuts or pecans (for delightful crunch)

Zest of 1 lemon

Optional: 1 tablespoon balsamic vinegar (for added depth of flavor)

Prepare the Figs: Begin by rinsing the figs thoroughly under cold water to eliminate any dirt. Carefully remove the stems and cut each fig into quarters; this step will facilitate their breakdown during the cooking process.

    Cook the Figs: In a medium saucepan, combine the quartered figs, granulated sugar, lemon juice, vanilla extract, ground cinnamon, and salt. If you desire a richer flavor, add the balsamic vinegar at this stage. Set the saucepan over medium heat, stirring frequently until the sugar fully dissolves and the mixture starts to bubble gently.

      Simmer: Once bubbling, reduce the heat to low and allow the mixture to simmer for approximately 30-35 minutes. Stir occasionally to prevent sticking. The aim is to soften the figs until they become jam-like in consistency. If the mixture thickens too much or begins to stick to the bottom, add a tablespoon of water to loosen it up.

        Incorporate Nuts: When the figs have cooked down and formed a thick, jammy texture, fold in the chopped walnuts or pecans along with the fresh lemon zest. Allow to cook for an additional 5 minutes; the nuts will introduce a delightful crunch to your fig jam.
