Ingredients

1 pound boneless, skinless chicken breasts, cut into strips

1 cup all-purpose flour

2 large eggs

1 tablespoon milk

1 cup Panko breadcrumbs

1/2 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried Italian seasoning

Salt and pepper to taste

1/2 cup mayonnaise (for dipping)

2 tablespoons fresh lemon juice (for dipping)

Fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Chicken: Begin by preheating your oven to 400°F (200°C). Rinse the chicken strips under cold water and dry them thoroughly using paper towels. Season both sides generously with salt and pepper to enhance flavor.

Set Up Your Bread Station: Create a breading assembly line using three shallow bowls. Pour the all-purpose flour into the first bowl. In the second, whisk together the eggs and milk until frothy. In the third bowl, combine Panko breadcrumbs, grated Parmesan cheese, garlic powder, smoked paprika, Italian seasoning, and a pinch of salt and pepper to form a flavorful coating mixture.

      Coat the Chicken:

        - Begin by taking each chicken strip and dipping it into the flour, ensuring it is fully coated. Shake off any excess flour to prevent clumping.

          - Next, dip the floured chicken strip into the egg mixture, allowing any excess egg to drip back into the bowl.

            - Finally, roll the chicken strip in the Panko-Parmesan mixture, pressing down lightly to ensure the coating adheres well. Place each coated strip on a baking sheet lined with parchment paper for easy cleanup.

Bake the Chicken: Once all strips are coated, lightly spray them with cooking spray to promote crispiness during baking. Bake in the preheated oven for 15–20 minutes, or until the strips are golden brown and cooked through (an internal temperature of 165°F / 74°C is ideal). To ensure even crispiness, flip the strips halfway through the baking time.

Prepare the Dipping Sauce: While the chicken is baking, make the dipping sauce by combining the mayonnaise and fresh lemon juice in a small bowl. Season with salt and pepper to taste, then stir until well blended.

Serve: Once the chicken strips are baked and have cooled slightly, garnish them with finely chopped fresh parsley for a pop of color. Serve hot alongside the tangy lemon mayonnaise dip for a delightful pairing.
