Ingredients

4 boneless, skinless chicken breasts

1 cup fig jam (store-bought or homemade)

1/4 cup balsamic vinegar

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh rosemary sprigs, for garnish

1 cup chicken broth

1 cup sliced mushrooms (optional)

1 cup baby spinach (optional)

Instructions

Prepare the Chicken: Start by seasoning the chicken breasts generously on both sides with salt, pepper, garlic powder, and onion powder. Ensure the chicken is evenly coated for maximum flavor.

Heat the Skillet: In a large skillet, pour in the olive oil and let it heat over medium-high heat. Once the oil glistens, carefully add the seasoned chicken breasts to the skillet. Sear the chicken for approximately 5-6 minutes per side, or until they are golden brown and fully cooked (internal temperature should reach 165°F/75°C). Once cooked, transfer the chicken to a plate and set aside.

Make the Sauce: In the same skillet, add in the sliced mushrooms (if using) and sauté them for about 3-4 minutes until they become tender. Next, pour in the balsamic vinegar and chicken broth, making sure to scrape up any flavorful bits stuck to the bottom of the pan. Stir in the fig jam and Dijon mustard, blending thoroughly until the sauce is combined and begins to thicken slightly.

Combine Chicken and Sauce: Return the seared chicken breasts back into the skillet, allowing them to soak up the rich fig jam sauce. Turn the heat down to low and let the mixture simmer for 5-7 minutes. This step melds the flavors beautifully.

Add Spinach: If you’re including spinach, gently fold it into the skillet during the last minute of cooking. This will allow it to wilt just enough without losing its vibrant color.

Serve: Plate the chicken breasts and generously spoon the flavorful fig jam sauce over the top. For added freshness and visual appeal, garnish the dish with sprigs of fresh rosemary.

Enjoy: Complement this delightful chicken dish with sides of your choice, such as roasted seasonal vegetables or creamy polenta, to create a well-rounded and satisfying meal.
