Ingredients

1 ½ cups mixed berries (use a combination of strawberries, blueberries, raspberries, or blackberries; fresh or frozen)

1 cup granulated sugar

1 cup freshly squeezed lemon juice (approximately 6-8 medium lemons)

2 cups water

½ cup sweetened condensed milk

Zest of 2 lemons

1 teaspoon vanilla extract

1 cup whipped cream (optional, for serving)

Extra berries and lemon slices for garnish

Instructions

Prepare the Berries:

    - If you’re using fresh berries, rinse them thoroughly under cold water and remove any stems. If using frozen berries, allow them to thaw for about 20-30 minutes at room temperature to make blending easier.

      Blend the Mixture:

        - In a high-powered blender, combine the prepared berries, granulated sugar, freshly squeezed lemon juice, water, sweetened condensed milk, lemon zest, and vanilla extract. Blend on high speed until the mixture is completely smooth, about 30-45 seconds.

          Strain the Mixture (Optional):

            - To achieve an ultra-smooth texture, you may strain the blended mixture through a fine-mesh sieve into a large mixing bowl. Use the back of a spoon to press the mixture against the sieve, extracting as much liquid as possible while discarding the solids. If you prefer a more textured bar, you can skip this step.

              Pour into Pan:

                - Pour the berry lemonade mixture into a 9x9 inch (or similar size) baking dish. Use a spatula to evenly smooth the top, ensuring the mixture is level.

                  Freeze:

                    - Cover the baking dish tightly with plastic wrap or a lid. Transfer it to the freezer and freeze for at least 4-6 hours, or until the bars are completely set and firm to the touch.

                      Cut and Serve:

                        - Once fully frozen, remove the dish from the freezer. Let it sit at room temperature for about 5-10 minutes to soften slightly before cutting. Use a sharp knife to slice the frozen mixture into desired shapes—bars or squares work well.

                          Garnish and Enjoy:

                            - Serve the frozen bars topped with a dollop of whipped cream, if using. Garnish each serving with extra berries and a slice of lemon for an eye-catching and refreshing presentation.
