Frozen Berry Swirl Chia Squares

1 cup chia seeds

4 cups almond milk (or your preferred plant-based milk)

1/4 cup maple syrup (or honey, if desired)

1 teaspoon vanilla extract

2 cups mixed berries (fresh or frozen - including blueberries, raspberries, and strawberries)

1 tablespoon lemon juice

1 tablespoon cornstarch (optional, for thickening the berry sauce)

Pinch of salt

Instructions
 

Combine the Base: In a large mixing bowl, vigorously whisk together the chia seeds, almond milk, maple syrup, vanilla extract, and a pinch of salt. Ensure the mixture is free from clumps of chia seeds. Set aside for 10-15 minutes to allow the chia seeds to absorb the liquid and thicken the mixture.

    Prepare the Berry Swirl: While the chia mixture is thickening, make the berry swirl. In a small saucepan set over medium heat, combine the mixed berries, lemon juice, and cornstarch (if using). Stir the mixture occasionally for about 5-7 minutes, or until the berries break down and create a saucy consistency. Once ready, remove from heat and let it cool slightly.

      Layer the Mixture: After the chia mixture has thickened, give it a gentle stir to ensure it's uniformly mixed. In an 8x8 inch square baking dish, pour in half of the chia mixture, spreading it evenly across the bottom.

        Add the Berry Sauce: Carefully spoon the berry sauce over the first layer of chia, aiming to create an even coverage without completely mixing. Finish by pouring the remaining chia mixture over the top, using a spatula to smooth it out.

          Create the Swirl: Using a knife or a skewer, gently create a swirl effect by dragging it through the berry sauce and chia mixture to create a beautiful marbled design.

            Freeze: Cover the baking dish with plastic wrap or a lid. Place it in the freezer and allow it to freeze for at least 4 hours or until it is fully solid.

              Serve: Once frozen, take the dish out of the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly for easier cutting. Cut into uniform squares and serve chilled as a delightful snack or dessert.

                Storage: For any leftovers, store them in an airtight container in the freezer, where they will keep well for up to 2 weeks.
