Ingredients

For the Crust:

1 ½ cups graham cracker crumbs

¼ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened to room temperature

½ cup granulated sugar

1 teaspoon vanilla extract

1 cup sour cream

2 large eggs

1 ½ cups fresh or frozen blueberries, thawed and drained

For the Blueberry Swirl:

1 cup fresh or frozen blueberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

Instructions

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix thoroughly until the crumbs are well coated.

        - Press this mixture evenly into the bottom of a greased 9x9-inch baking dish, ensuring that it is packed tightly.

          - Bake the crust in the preheated oven for 10 minutes. Once done, remove it from the oven and allow it to cool completely.

            Make the Blueberry Swirl:

              - In a small saucepan over medium heat, combine the blueberries, granulated sugar, and lemon juice.

                - Cook the mixture for about 5-7 minutes, stirring occasionally. You want the blueberries to break down and create a slightly thick sauce.

                  - Once cooked, remove from heat and let the blueberry sauce cool while you prepare the cheesecake filling.

                    Prepare the Cheesecake Filling:

                      - In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

                        - Gradually add in the granulated sugar, continuing to mix until fully incorporated.

                          - Mix in the vanilla extract and sour cream until the mixture is smooth and blended.

                            - Add the eggs one at a time, mixing gently after each addition until just incorporated. Be careful not to overmix.

                              Add Blueberries:

                                - Gently fold the drained blueberries into the cheesecake filling, being cautious to distribute them evenly without overworking the mix.

                                  Assemble the Bars:

                                    - Once the crust has cooled, pour the cheesecake filling over the crust, spreading it evenly.

                                      - Using a spoon, drop dollops of the blueberry swirl on top of the cheesecake filling.

                                        - With a knife or toothpick, create a swirl effect by gently mixing the blueberry sauce into the filling.

                                          Freeze the Bars:

                                            - Cover the baking dish tightly with plastic wrap or aluminum foil.

                                              - Freeze the cheesecake bars for at least 4 hours, or until they are completely set.

                                                Serve:

                                                  - After freezing, carefully remove the cheesecake bars from the dish using the edges of the foil or parchment paper, if used.

                                                    - Cut into squares for serving. Enjoy immediately! Store any leftovers in the freezer for future enjoyment.
