2 large ripe mangoes, peeled and diced

1 cup coconut milk (preferably full-fat for extra creaminess)

1/2 cup coconut cream

1/4 cup honey or maple syrup (adjust based on desired sweetness)

1 teaspoon vanilla extract

1 tablespoon fresh lime juice

Pinch of salt

Toasted coconut flakes, for garnish

Fresh mint leaves, for optional garnish

Instructions
 

Prepare the Mango Puree:

    In a high-speed blender, combine the diced mangoes, lime juice, and a pinch of salt. Blend until you achieve a smooth and creamy consistency. Set aside the mango puree.

      Whip Up the Coconut Cream Mixture:

        In a medium mixing bowl, whisk together the coconut milk, coconut cream, honey (or maple syrup), and vanilla extract. Continue whisking until all ingredients are thoroughly combined and the mixture is creamy and smooth.

          Layer the Mixtures:

            Take silicone muffin cups or small dessert cups and start building your layers. Add a spoonful of the coconut cream mixture to the bottom of each cup, followed by a generous scoop of the smooth mango puree. Top that with another layer of the coconut cream mixture.

              Repeat Layering:

                Continue the layering process, alternating between the mango puree and coconut cream until the cups are almost full. Be sure to finish with a final layer of coconut cream on top for an appealing finish.

                  Freeze the Cups:

                    Carefully place the filled cups in the freezer and allow them to freeze for about 4-6 hours, or until they are completely firm and frozen through.

                      Unmold and Serve:

                        Once the cups are frozen, run warm water over the outside of the cups for a few seconds. This will help loosen the mixture. Gently pull the frozen mango coconut cream cups from the silicone molds.

                          Garnish and Enjoy:
