2 cups frozen pineapple chunks

1 cup Greek yogurt (choose between vanilla or plain for your preference)

1/4 cup honey or maple syrup

1 cup granola (select your favorite, either plain or flavored)

1/2 cup shredded coconut (choose sweetened or unsweetened based on taste)

1/4 teaspoon salt

Optional toppings: chopped nuts, chocolate chips, fresh fruit slices (such as strawberries, kiwi, or bananas)

Instructions
 

Blend the Base: In a blender or food processor, combine the frozen pineapple chunks, Greek yogurt, honey or maple syrup, and salt. Blend on high speed until the mixture is smooth and creamy, pausing occasionally to scrape down the sides for an even consistency.

    Prepare the Pan: Line an 8x8 inch (or equivalent) square baking dish with parchment paper. Allow some overhang on the edges; this will help you lift out the bars easily once they’re frozen.

      Layer the Mixture: Pour the blended pineapple yogurt mixture into the prepared baking dish. Use a spatula to spread and smooth the mixture evenly across the dish.

        Add the Crunch: Evenly sprinkle the granola and shredded coconut over the top of the yogurt mixture. Gently press them into the surface to ensure they adhere well.

          Freeze: Transfer the baking dish to the freezer and allow it to freeze for at least 4 hours, or until the mixture is completely firm.
