Ingredients

2 cups fresh or frozen raspberries

1 cup canned coconut milk (for extra creaminess)

1/2 cup natural yogurt (choose Greek or a plant-based option)

1/4 cup honey, maple syrup, or agave nectar (adjust according to your sweetness preference)

1 teaspoon pure vanilla extract

1/4 teaspoon sea salt

Optional: toasted coconut flakes for an elegant garnish

Instructions

Prepare the Raspberry Puree: If using fresh raspberries, rinse them thoroughly under cold water. In a blender, add the raspberries and blend until smooth. If you prefer a bit of texture, set aside a handful of raspberries to fold in later, creating a delightful contrast in your ice pops.

Mix the Coconut Base: In a medium mixing bowl, combine the canned coconut milk, yogurt, your chosen sweetener (honey, maple syrup, or agave nectar), vanilla extract, and sea salt. Whisk together until the mixture is fully combined and creamy.

Layer the Mixtures: To create a beautiful swirled effect, pour a small amount of the coconut mixture into the bottom of each ice pop mold (about one-third full). Next, add a layer of raspberry puree (also about one-third full), and then top off with the remaining coconut mixture until the molds are full.

Swirl (Optional): For a marbled effect, take a skewer or chopstick and gently swirl the mixtures together. Be careful not to overmix; you want to maintain the distinct layers for beautiful presentation.

Insert Sticks: Place the ice pop sticks in the center of each mold, ensuring they are securely positioned.

Freeze: Transfer the filled molds to the freezer and allow them to freeze for at least 4-6 hours or until they have solidified completely.

Unmold the Ice Pops: To release the ice pops, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the pops without any hassle.

Serve and Enjoy: If desired, sprinkle the ice pops with toasted coconut flakes for that extra touch of flavor and presentation. Serve them on a warm day to cool down and enjoy these delightful, refreshing treats!
