1 ½ cups plain Greek yogurt

¾ cup unsweetened applesauce

¼ cup honey or maple syrup

1 tsp vanilla extract

1 tsp ground cinnamon

¼ tsp nutmeg

1 cup finely chopped apples (preferably Granny Smith or Honeycrisp)

1 ½ cups gluten-free or regular all-purpose flour

1 tbsp baking powder

¼ tsp salt

¼ cup brown sugar

2 large eggs

⅓ cup melted coconut oil or butter

1 cup crushed graham crackers (for topping)

½ cup finely chopped walnuts or pecans (optional)

Instructions
 

Prepare the Yogurt Mixture: In a medium mixing bowl, blend together the Greek yogurt, applesauce, honey (or maple syrup), vanilla extract, ground cinnamon, and nutmeg until smooth and homogeneous. Set aside for later use.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and brown sugar until fully combined and there are no lumps.

      Combine Wet Ingredients: In another separate bowl, vigorously whisk together the two large eggs until light and fluffy. Gradually blend in the melted coconut oil (or butter) until fully incorporated.

        Mix Together: Pour the dry ingredients into the bowl with the wet ingredients. Stir gently until the mixture is just combined. Next, fold in the yogurt mixture and the finely chopped apples with care, ensuring all ingredients are evenly mixed without overworking the batter.
