Ingredients

1 large head of cauliflower

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon sea salt (adjust to taste)

½ teaspoon freshly ground black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prep the Cauliflower:

    - Begin by removing the outer leaves from the cauliflower head. With a sharp knife, carefully slice the cauliflower into 1-inch thick steaks. Expect some florets to break away; save these for a different dish or snack.

      Make the Herb Mixture:

        - In a small mixing bowl, combine the olive oil, minced garlic, dried thyme, dried oregano, smoked paprika, sea salt, and black pepper. Stir thoroughly until you have a fragrant garlic herb oil that is well incorporated.

          Coat the Cauliflower Steaks:

            - Preheat your oven to 425°F (220°C) to prepare for roasting. Line a baking sheet with parchment paper or lightly grease it with cooking spray to prevent sticking.

              - Arrange the cauliflower steaks on the baking sheet, ensuring they are spaced apart for even cooking. With a brush or spoon, generously coat both sides of the cauliflower steaks with the garlic herb oil mixture.

                Roast the Cauliflower:

                  - Place the baking sheet in the preheated oven and roast the cauliflower steaks for approximately 25-30 minutes. Be sure to flip them halfway through to achieve even cooking. Roast until the steaks are golden brown, tender, and have crispy edges for added texture.

                    Garnish and Serve:

                      - Once roasted to perfection, remove the cauliflower from the oven and allow it to rest for a few minutes. Just before serving, sprinkle the warm steaks with freshly chopped parsley for a pop of color and flavor. Accompany the dish with wedges of lemon for a zesty finish that enhances the dish.

                        Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 4

                          - Presentation Tips: Serve the cauliflower steaks on a long platter with lemon wedges elegantly arranged beside them. A drizzle of additional olive oil or balsamic glaze over the top can also add a finishing touch.
