Ingredients

For the Dough:

4 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

1 tablespoon granulated sugar

1 teaspoon salt

1 ½ cups warm water (around 110°F)

2 tablespoons olive oil

For the Filling:

2 cups cooked chicken, shredded

1 cup green chilies, diced (fresh or canned)

1 cup cream cheese, softened

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Instructions

Prepare the Dough: In a mixing bowl, combine the warm water, sugar, and active dry yeast. Allow the mixture to rest for about 5 minutes, or until it becomes frothy and bubbly. Meanwhile, in a large bowl, whisk together the all-purpose flour and salt. Gradually stir in the yeast mixture and add the olive oil. Mix until a dough starts to form.

Knead the Dough: Transfer the dough onto a floured surface and knead it for approximately 10 minutes until it becomes smooth and elastic. Once kneaded, place the dough in a greased bowl and cover it with a damp cloth. Set the bowl in a warm location and let the dough rise for 1 hour, or until it has doubled in size.

Make the Filling: In a separate bowl, combine the shredded chicken, diced green chilies, softened cream cheese, shredded mozzarella cheese, garlic powder, and cumin. Season with salt and pepper to taste. Mix thoroughly until all ingredients are well incorporated and the filling is creamy. Set the filling aside.

Assemble the Stuffed Bread: Preheat your oven to 375°F (190°C). Once the dough has risen, punch it down gently to remove air bubbles and divide it into 4 equal pieces. Roll out each piece into a rectangle shape, about ¼ inch thick. Place a generous spoonful of the chicken mixture down the center of each rectangle, leaving space around the edges.

Shape the Bread: Fold the sides of the dough over the filling, pinching the edges securely to seal each stuffed bread completely. Arrange the formed loaves seam-side down on a parchment-lined baking sheet.

Bake the Bread: Lightly brush the tops of the stuffed breads with a little olive oil to enhance the golden color during baking. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the breads are golden brown and puffed.

Serve: Allow the bread to cool for a few minutes on a wire rack before slicing. Garnish with chopped fresh cilantro for a burst of color and freshness. Serve the stuffed bread warm, perfect for sharing as an appetizer or a delightful main dish.
