2 cups cooked turkey, shredded

1 cup green chilies, diced (canned or roasted)

1 cup shredded mozzarella cheese

1 cup shredded Monterey Jack cheese

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving)

Prep the Filling: In a large mixing bowl, combine the shredded turkey with the diced green chilies, both cheeses, finely chopped red onion, minced garlic, cumin, and smoked paprika. Stir well until all ingredients are evenly mixed and well incorporated.

    Sauté the Mixture: Heat the olive oil in a large skillet over medium heat. Once hot, add the turkey filling mixture to the skillet. Cook for approximately 5-7 minutes, stirring occasionally, until the onion becomes translucent and the filling is heated thoroughly. Remove the skillet from the heat and set the filling aside.

      Assemble the Quesadillas: Place a large non-stick skillet over medium heat to warm up. Lay one tortilla flat in the skillet. Spread a generous portion of the turkey and cheese filling over half of the tortilla. Carefully fold the tortilla in half to enclose the filling.

        Cook the Quesadilla: Let the quesadilla cook for about 3-4 minutes on one side, or until it turns golden brown and develops a crispy texture. Using a spatula, gently flip the quesadilla, allowing it to cook for an additional 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

          Repeat: Continue the process with the remaining tortillas and filling, assembling and cooking each quesadilla one at a time or in batches as needed.

            Slice and Serve: Once all the quesadillas are cooked, remove them from the skillet and let them cool for a minute. Using a sharp knife or pizza cutter, slice each quesadilla into wedges. Garnish with freshly chopped cilantro and serve with dollops of sour cream or guacamole alongside.
