2 large whole wheat or spinach tortillas

1 cup hummus (store-bought or homemade)

1 small zucchini, sliced into thin rounds

1 red bell pepper, sliced into strips

1 small yellow squash, sliced into thin rounds

1 cup fresh spinach leaves

½ cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Optional: Feta cheese or crumbled goat cheese for topping

Instructions
 

Prep the Vegetables: In a mixing bowl, combine the sliced zucchini, yellow squash, and red bell pepper. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss everything together until the vegetables are well-coated with the seasoning.

    Grill the Vegetables: Preheat your grill or grill pan over medium heat. Once it's hot, arrange the seasoned vegetables on the grill. Grill for approximately 3-4 minutes on each side, or until they are tender and have beautiful grill marks. Once done, remove from the heat and set aside to cool slightly.

      Assemble the Wraps: Take each tortilla and spread a generous, even layer of hummus over the surface, leaving about an inch around the edges. Layer fresh spinach leaves on top of the hummus, followed by a portion of the grilled vegetables and halved cherry tomatoes. If desired, finish with a sprinkle of feta or goat cheese for added flavor.

        Wrap it Up: To create a secure wrap, first fold in the sides of the tortilla. Then, starting from the bottom, roll the tortilla tightly away from you, ensuring the filling remains securely inside.

          Optional Grilling for Texture: For an extra touch, place the wrapped tortillas back onto the grill for 2-3 minutes, flipping once to achieve a warm, crispy exterior.
