Ingredients

1 lb ground beef

1 cup Hatch green chilies, diced (roasted and peeled if available)

1 can (15 oz) black beans, drained and rinsed

1 cup cooked rice (white or brown)

1 cup shredded sharp cheddar cheese

1/2 cup diced onions

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and black pepper, to taste

6 large flour tortillas

2 tbsp olive oil

Fresh cilantro, for garnish

Sour cream and salsa, for serving (optional)

Instructions

Prepare the Beef Filling:

    - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the diced onions and minced garlic. Sauté for about 3-4 minutes, until the onions become translucent and fragrant.

      - Add the ground beef to the skillet. Cook, breaking the beef into smaller pieces with a spatula, until browned, roughly 6-8 minutes. Drain any excess fat from the skillet.

        - Stir in the diced Hatch green chilies, drained black beans, cooked rice, ground cumin, chili powder, smoked paprika, and season with salt and pepper. Mix everything well and let it simmer for 5 minutes to allow the flavors to combine. Remove from heat and set aside.

          Assemble the Burritos:

            - On a clean, flat surface, lay out one large flour tortilla. Spoon about 1 cup of the beef and bean mixture into the center of the tortilla.

              - Sprinkle a generous handful of shredded cheddar cheese on top of the filling.

                - To roll the burrito, fold the sides of the tortilla inward over the filling, then starting from the bottom, roll it up tightly to form a secure burrito. Repeat this process for the remaining tortillas and filling.

                  Cook the Burritos:

                    - Preheat a large skillet or grill pan over medium-high heat. If desired, add a dash of oil to the pan for extra crispiness.

                      - Place the burritos seam-side down in the skillet, working in batches if necessary to prevent overcrowding. Cook for 3-4 minutes on each side or until the burritos turn golden brown and crispy.

                        Serve:

                          - Once cooked, transfer the burritos to a plate and allow them to rest for a minute. For an elegant presentation, slice each burrito in half diagonally.

                            - Garnish with freshly chopped cilantro. Serve with a dollop of sour cream and a side of salsa for dipping, if desired.
