1 cup corn kernels (frozen, canned, or fresh)

1 cup ripe avocado, diced

1 cup tomato, diced

½ cup red onion, diced

1 cup shredded lettuce (choose romaine or green leaf)

1 cup roasted Hatch green chiles, diced (fresh or canned)

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

½ cup sour cream or Greek yogurt (for topping)

Fresh cilantro leaves (for garnish)

Prepare the Ingredients: If using fresh Hatch chiles, roast them by placing them over an open flame or in a preheated oven at 400°F (200°C) until the skin is charred, approximately 15-20 minutes. Once roasted, transfer them to a sealed container for about 10 minutes to steam, which helps ease peeling. Carefully peel off the charred skin, remove the seeds, and chop the chiles into small pieces.

    Mix the Filling: In a large mixing bowl, combine the cooked black beans, corn kernels, diced avocado, tomato, red onion, shredded lettuce, and the diced roasted Hatch chiles. Use a spatula for gentle mixing to maintain the integrity of the avocado.
