1 pound of baby carrots (alternatively, a combination of whole and baby carrots)

2 tablespoons of extra virgin olive oil

3 tablespoons of pure honey

1 teaspoon of balsamic vinegar

1 teaspoon of fresh thyme leaves (or ½ teaspoon of dried thyme)

Salt and freshly cracked black pepper, to taste

1 tablespoon of unsalted butter (optional, for added richness)

    Prepare the Carrots: If you're using whole carrots, wash and peel them before slicing into uniform pieces, approximately 2-3 inches long. For baby carrots, you can leave them whole or halve any larger ones lengthwise to ensure even cooking.

      Make the Glaze: In a small mixing bowl, combine the olive oil, honey, balsamic vinegar, fresh thyme, salt, and pepper. Whisk together until the mixture is smooth and well blended.
